Description: This Mezcal is produced in the state of Oaxaca and is made from a combination of Madrecuishe, Jabali, and Espadin agave species. The Madrecuishe and Jabali agave take 15-18 years to reach peak maturity, while the Espadin agave takes 7 years. After the agave plants are harvested by hand and milled with mallets, they are fermented in open-air pine wood vats and distilled twice in a copper still. This Mezcal has a strong personality, a crystalline color, and aromas of citrus, minerals, and earth. The Jabli agave adds butter and hazelnut notes, while the Madrecuishe agave brings a mineral flavor with notes of moist earth, dried trees, and fresh herbs. The Espadin agave adds a silky, fruity citrus flavor to the Mezcal.
