El Silencio Espadin Mezcal

El Silencio is the black-bottle mezcal that put the category on backbars from Santa Monica to Manhattan. Fausto Zapata and Vicente Cisneros founded it in 2013, Constellation Brands took a minority stake in 2019, and IJW Whiskey bought the brand in 2025; the mezcal comes from San Baltazar Guelavila, Oaxaca, in the hills above the Tlacolula valley. Espadín is the flagship: eight-to-ten-year espadín roasted in an earthen pit over oak, crushed by tahona, fermented with wild yeast in wooden vats, and double-distilled in copper, bottled unaged at 43% ABV in the matte black ceramic bottle that made the brand recognizable at a glance. The house style is built for the modern cocktail bar: expect a nose of roasted agave, campfire smoke, and green pepper with a touch of tropical fruit, opening into a smooth, medium-bodied palate of cooked agave sweetness, black pepper, citrus, and earth, with the smoke present but balanced, finishing warm and moderately long.
