Ancestral is the top of Código 1530's mezcal line and the most traditional thing the brand makes — a 100% papalomé mezcal produced with no modern technology at all. Papalomé is a regional name for a wild Agave potatorum cousin of tobalá, small, slow-growing, and scarce, harvested from the hillsides around San Juan del Río, Oaxaca, where Código partnered with a village of families who've made mezcal for generations. "Ancestral" is a legal category in Mexico with strict rules: the agave is cooked in an earthen pit, crushed by hand with wooden mallets, fermented in wood, stone, or clay, and distilled in clay pots over direct fire — the method that predates copper. Bottled at around 45% ABV in a numbered bottle; check your label.
