Amaras is the mezcal arm of Casa Amaras, which plants agave for every bottle sold and works with maestros across Oaxaca and Guerrero; the Espadín is made in the Tlacolula valley from eight-year cultivated espadín roasted in a stone-lined earthen pit over oak, crushed by tahona, fermented with wild yeast in pine vats, and double-distilled in copper, bottled at 41% ABV in the tall bottle with the Amaras crest. The house style is clean and approachable: expect a nose of cooked agave, honeysuckle, and jasmine with a light, sweet smoke, opening into a smooth, medium-bodied palate of caramel, green pepper, and citrus with the smoke balanced rather than dominant, finishing warm and moderately long. Where the Verde is the cocktail workhorse at 42% and the Cupreata is the fruit-forward Guerrero bottle, the Espadín sits between — a sipping-and-mixing espadín built for people who want Oaxaca without the bruising.
