Alipús is a map of Oaxaca, one village per bottle. Los Danzantes, the Oaxaca City restaurant-turned-distillery, launched it in 1999 to bottle the work of individual family palenques in remote pueblos and put each maker's name on the label — a radical idea when mezcal was still sold as a generic. San Andrés, the pink label, is made by Don Valente Ángel and his sons in Santa María La Pila, in the San Andrés district: non-irrigated espadín, pit-roasted in a conical earthen horno, crushed by tahona, fermented in wood, and double-distilled in copper, bottled at around 47% ABV; every lot varies, so check yours. Spirit Animal called it their favorite mezcal flat-out — a masterpiece of blending earthiness and fruit in a way no tequila can, the bottle to make anyone who thinks of mezcal as a tire fire reconsider.
