Description: Agave Lechuguilla is a species of agave that is native to the Chihuahuan Desert and grows deep inside the Copper Canyon of the Sierra Madre Occidental. Its name, "Lechuguilla," means "small lettuce." The rustic vinata of Maestro Dolores González Torres, a fourth-generation master distiller from the community of Yerbaniz Batopilas, is located deep in the steep mountains. Maestro Torres crushes the agave by hand with an ax, and then ferments it for 6-8 days in stone vats that have been used for over 100 years. To aid in the fermentation process, Maestro Torres adds a small amount of sotol and local spring mountain water to the agave. The fermented agave is then distilled in a Mongol-type still with copper pots using a unique process. The stills are heated using dense pinewood, called Higuera, and a direct fire.
