Description: During a visit to Cobram Estate during olive harvest, we discovered that olive oil could be a wonderful botanical to use in gin, along with olive leaf. The aroma, flavor, and texture of fresh olives are stunning, and we spent a year experimenting with different recipes before finalizing our own. Our gin is made with a base of juniper, along with savory coriander seed, rosemary, olive leaf, olive oil, bay leaf, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit. The fresh ingredients were vapor infused, while the others were macerated in the pot. We used olive leaf and oil from the Picual, Hojiblanca, and Coratina varieties, resulting in a savory, textural, and bright gin. It is perfect for any martini – Gibson, dirty, or dry with a twist – or try it in a Spanish-inspired Gintonic with rosemary and lemon for a longer drink.
