Glendalough Rose Gin

Glendalough Rose is a gin made from three roses. The Wicklow distillery south of Dublin — the one that employs full-time forager Geraldine Kavanagh to gather wild botanicals from the mountains — built it on its Wild Botanical Gin, then infused it with wild Irish roses foraged locally, heritage roses from the garden of Kavanagh's own mother, and Bulgarian Damask roses, the variety perfumers prize above all others. The petals are added by slow vapor infusion and post-distillation, and no artificial color is used — the pale rose hue comes from the petals themselves. Bottled at 37.5% ABV. The result is one of the most genuinely floral gins made, but with the Wild Botanical's foraged backbone keeping it from turning into perfume: expect fresh-cut rose petals and Turkish-delight sweetness on the nose over juniper, wild Wicklow herbs, and a whisper of citrus, opening into a soft, silky palate where the rose stays fresh and green rather than soapy, the foraged botanicals add depth, and the juniper holds it together, finishing gentle and floral. Honest note: this is a lower-proof, unapologetically floral gin, and juniper purists should reach for the Wild Botanical.
