Description: Watari Bune is the variety of rice used to produce this sake. The brewery brought this rice strain back to life in the 1990s, after it had been extinct for 60 years. It took three years for them to harvest enough rice to brew their first batch of sake. Today, it has become a cult favorite among sake enthusiasts, prized for its distinctive flavor profile that combines nutty notes with ripe fruit, bright acidity, and a delicate effervescence. Huchu Homare was established in 1854 and is now run by the 7th generation of the Yamauchi family, Takaaki “Taka” Yamauchi. When the brewery was founded, its inaugural brand was Taiheikai, which means “Pacific Ocean.” The brewery made history in the early 1990s when Taka Yamauchi revived the extinct Watari Bune rice, launching a special line of sake to celebrate the return of this unique rice variety.
