Watari Bune Junmai Ginjo 55 Sake
Watari Bune Junmai Ginjo 55 is a cult sake from Huchu Homare, a brewery in Ibaraki Prefecture founded in 1854 and now run by seventh-generation owner Takaaki "Taka" Yamauchi. The name refers to the rice: Watari Bune, a heritage sake rice that went extinct for 60 years until Yamauchi revived it in the early 1990s from a handful of seeds, spending three years growing enough to brew a single batch.
Polished to 55% and brewed with no added alcohol, it has a distinctive profile that combines nutty notes with ripe fruit, bright acidity, and a delicate effervescence, finishing clean at 16% ABV. It is a favorite of sake enthusiasts and sommeliers for that unmistakable character. Serve it chilled in a wine glass with sashimi, grilled fish, or aged cheese. This 720 ml bottle is a piece of sake history and a memorable gift.
