Chokara means "extremely dry," and brewmaster Yuichi Tsubosaka makes the style unlike anyone else. Where most chokara sake runs lean and austere front to back, his Junmai Ginjo pulls off a genuine trick: it starts luscious and fruity, with generous tropical fruit flavors, then resolves into a beautifully spicy, tingling finish reminiscent of white pepper — dry where it counts, generous where it matters. The rice is the pedigree here: locally grown Grade A Yamada Nishiki from Yokowa — the same coveted Special A District fruit behind the brewery's top daiginjo — milled to 55% and brewed with soft Ibo River water at Sanyohai Brewery (founded 1837 in Hyogo, Japan's most famous sake rice country). True Sake calls it a "performance sake" — one built to drink dry, be dry, and do everything dryness should do at the table — finding Asian apple, cinnamon, pear, steamed rice, and minerals on the nose. Skurnik's notes add sweet mint and underripe plantain aromas, a brightly textured palate with a light touch and lean structure, and ruby red grapefruit heading into that signature tingly finish.
