Rihaku Dreamy Clouds Tokubetsu Junmai Nigori Sake
Rihaku "Dreamy Clouds" is a Tokubetsu Junmai Nigori from Rihaku Shuzo in Shimane Prefecture, on the rural Sea of Japan coast near the great Izumo shrine. The brewery is named after Li Bai, the Tang-dynasty Chinese poet known in Japan as Rihaku, who was famous for writing his best verses after a good deal of wine.
Dreamy Clouds is a lightly cloudy nigori with far more elegance than most: coarsely filtered for a soft, silky texture but brewed as a special junmai from rice polished to 59%, so it stays dry, clean, and refined with gentle notes of rice, melon, and a hint of citrus at 15% ABV. Shake gently and serve chilled or at room temperature with spicy food, grilled fish, or creamy dishes. This 720 ml bottle is a cult favorite among sake sommeliers.
