Siembra isn't one tequila. It's a series, each bottle made at a different traditional distillery in Jalisco to show what that distillery's terroir and methods taste like on their own. The man behind it, David Suro, is a Philadelphia restaurateur and one of the loudest voices for additive-free, traditionally made agave spirits. Here's how the lineup works, which Siembra tequilas we have in stock, and which to buy.

About Siembra Spirits
Siembra Spirits was built on a simple idea: Jalisco's best family distilleries already make tequila the right way, with mature agave, brick ovens, native yeast, copper stills, and zero additives, so the brand's job is to bottle that work one terroir at a time rather than build a factory of its own. Every Siembra bottle names its distillery and NOM number, and every one is additive-free.
The series maps Jalisco's two main growing regions. Siembra Valles is the lowland tequila, made at Destilería Cascahuín (NOM 1123), the Rosales family distillery in El Arenal that has run since 1904 and is one of the most respected valley distilleries in Mexico. Siembra Azul, the original release from 2005, and Siembra Alteño are the highland tequilas, from the Los Altos region near Arandas. Alteño is made at La Alteña, the Camarena family distillery that also makes El Tesoro and Tapatío.
The difference between highland and lowland tequila is real and easy to taste. Highland agave grows in red iron-rich soil at higher elevation and tends toward bright citrus and floral notes. Valley agave grows in volcanic lowland soil and leans earthy and mineral. Buy a Siembra from each region, taste them side by side, and you'll understand it in one sip.

Siembra Valles Blanco
The lowland benchmark. Made at Cascahuín from 100% blue Weber agave, 80% of it grown on the distillery's own land, slow-roasted up to 72 hours in brick ovens, fermented with native yeast in stone and stainless tanks, double-distilled in copper, and bottled at 40% ABV. The reviewers at Old Town Tequila call it one to keep on the shelf at all times, and Agave Matchmaker's tasters describe Cascahuín's signature of cooked agave, wet stone, minerals, and pepper. This is the bottle to start with.
Siembra Valles High Proof Blanco
The same Cascahuín tequila, tahona-crushed and bottled at 49.5% ABV (99 proof). High-proof blanco is the enthusiast's category, and this is the lowland answer to Fortaleza Still Strength: denser, oilier, and more mineral than the standard Blanco. Drink it neat with a drop of water.
Siembra Valles Aniversario Joven
Siembra's once-a-year release of something unusual. This Joven blends a two-month reposado rested in both American and French oak with unaged blanco from the same Cascahuín stills, bottled at 41% ABV. The label carries a portrait of Salvador Rosales Briseño, Cascahuín's founder, whose grandson runs the distillery today. A limited bottling; the next Aniversario will be something different.
Siembra Azul Blanco
The original Siembra, launched in 2005, and the highland half of the terroir lesson. Made at Feliciano Vivanco (NOM 1414) near Arandas from 100% highland blue Weber agave roasted in brick ovens, double-distilled in copper, and bottled at 40% ABV. Expect bright citrus and florals where the Valles is earth and stone.
Siembra Alteño Blanco
Highland tequila from La Alteña, the Camarena distillery behind El Tesoro and Tapatío. Mature Los Altos agave slow-roasted in brick ovens, crushed by La Alteña's two-ton stone tahona, fermented with the fibers in wooden tanks, distilled in copper, and bottled at 40% ABV. La Alteña, Cascahuín, and Fortaleza are the three distilleries enthusiasts rank at the top of traditional tequila, and this is the cheapest way to taste one of them under the Siembra name.
