Four Pillars started in 2013 with three mates and one copper still named Wilma, after co-founder Cameron Mackenzie's late mother. Mackenzie, a former winemaker, was experimenting out the back of Rob Dolan's winery in the Yarra Valley with Stuart Gregor and Matt Jones, and the shed project turned into the most decorated craft gin operation in the Southern Hemisphere — named the world's leading gin producer by the International Wine & Spirit Competition three times, first in 2019. The distillery moved into a converted timber yard in Healesville in 2015, an hour from Melbourne, and Wilma has since been joined by Jude, Eileen, Beth, and Coral. The house signature is whole fresh citrus in every gin, alongside native Australian botanicals like Tasmanian pepperberry and lemon myrtle. Rare Dry Gin is the flagship — bright, aromatic, and the base for nearly everything else. Bloody Shiraz is the cult icon: in 2015 a parcel of Yarra Valley Shiraz came in that nobody knew what to do with, so Mackenzie steeped the whole berries in high-proof gin for eight weeks; the result was a rich purple gin, naturally sweet with no added sugar, that turns iridescent pink with tonic. Four Pillars is now the largest buyer of Shiraz in the valley.
