Hampden Estate in Trelawny, Jamaica has been making sugar and rum since 1753 and is the most extreme expression of the Jamaican high-ester style. Fermentation runs eight to fifteen days in open cedar vats on wild yeast, with dunder and muck-pit acids added, and everything is distilled in six copper double-retort pot stills with no additives, color, or filtration. Each rum carries a mark, from the lighter OWH and LROK through HLCF to the legal-maximum DOK, which is where the overripe banana and pineapple intensity comes from.
