William Larue Weller started distilling wheated bourbon back in 1849, credited as the first to swap rye for wheat as bourbon's secondary grain — sealing every bottle with a green wax thumbprint as his personal mark of quality. After his death in 1899, his company merged with the A. Ph. Stitzel Distillery, owned by a young Julian "Pappy" Van Winkle who'd started his career at Weller, forming the Stitzel-Weller Distilling Company in 1935. Buffalo Trace has produced Weller since 1999, and the connection to Pappy's own wheated bourbon has made the entire lineup among the most hunted in the category.
