Redbreast is the gold standard for single pot still — the whiskey style that exists only in Ireland, distilled from a mash of malted and unmalted barley in copper pots, born from an 18th-century dodge around a British malt tax and now the country's premium tier. The brand began with W&A Gilbey, a London wine and spirits merchant that opened Dublin cellars in 1861 and became one of the largest holders of maturing Irish whiskey, bottling distillate from Jameson's Bow Street distillery under its own labels. In 1912 the chairman, an avid birdwatcher, named the flagship for the European robin — a nod to the whiskey's rosy sherry-cask hue. It nearly vanished: Gilbey's last bottling was 1985, and the style itself survived largely because Barry Crockett kept making it at Midleton when no one else in Ireland did. Irish Distillers bought the name in 1986, and Redbreast 12 returned in December 1991 with a revamped wood program built entirely on first-fill Oloroso sherry butts and ex-bourbon barrels. Michael Jackson called it a dream whiskey. The signature is texture — rich, oily, coating — layered with dried fruit, spice, toasted oak, and nuttiness from the sherry.
