The Macallan has been distilling at Easter Elchies in Speyside since 1824, when Alexander Reid became one of the first legally licensed distillers in Scotland — though the estate itself has been farmed since 1543, and the Jacobean manor house built in 1700 still appears on every bottle. The 485-acre estate runs along a mile and a half of the River Spey, and it's where everything happens: distilling, maturation across 16 traditional dunnage and 35 racked warehouses, and the barley grown on site. The house is guided by what it calls the Six Pillars — the Estate, Curiously Small Stills, Exceptional Oak Casks, Sherry Seasoning, Natural Colour, and Mastery. Two of those genuinely set it apart. The stills stand no more than four meters tall with necks that fall away sharply, concentrating the new make into something unusually rich and oily. And the wood program is the most vertically integrated in Scotch: Macallan specifies its own European oak from Spain and American oak from the US, has the casks coopered to order, seasons them with sherry in Spanish bodegas for months, then ships them to Speyside. Nothing is caramel-colored — every shade in the glass comes from the wood. The range spans Double Cask, Sherry Oak, Triple Cask, Rare Cask, the Harmony and Edition series, and the ultra-rare Lalique and Fine & Rare decanters that regularly break auction records.
