Aberfeldy is the only distillery the Dewar family ever built. John Dewar started as a wine merchant in Perth in 1846 and began blending whisky mid-century, but it was his sons who made the name global — Tommy Dewar set off in 1892 on a two-year journey through 26 countries looking for agents to sell Scotch, came home with distribution on several continents, and the family suddenly needed a reliable supply of malt. So in 1896 they built a distillery in Highland Perthshire, two miles from the croft where their father was born, on the banks of the Pitilie Burn. The burn is the brand's whole identity: it genuinely carries deposits of alluvial gold, still panned today, and the "Golden Dram" nickname plays on that and on the whisky's signature heather-honey character. That honey is real and it's process-driven — fermentation runs an unusually long 72 to 88 hours in Siberian larch washbacks, building the flavor esters, before slow distillation in onion-shaped copper stills. For most of its life Aberfeldy vanished into Dewar's White Label, where it remains the heart malt; the first single malt release, the 12 Year, only arrived in 1999 after Bacardi bought the distillery. The core range now runs 12, 16 (finished in Oloroso sherry), 21, and 25 Year, plus the Red Wine Cask and Exceptional Cask series. Smooth, honeyed, orchard-fruited Highland malt — the definition of approachable.
