All Discerning Palates Will Eventually Find Fruit is an independent, cask-strength bottling of Normandy Calvados that trades a traditional house name for a cheeky statement on the label. The original distillery is not disclosed, which is common practice for independent bottlings of French brandy, so the bottle is judged on what is inside rather than on a crest.
Calvados is made by fermenting cider from Normandy apples (and sometimes perry pears), distilling it and ageing the spirit in oak. The XO designation legally requires at least six years in wood; this release states a minimum of ten years in oak casks and is bottled undiluted at 122.4 proof (61.2% ABV), far above the 40% at which nearly all Calvados is sold. The bottler describes deep and layered orchard fruit.
The collection currently consists of this single XO release, a rare full-proof, decade-plus Calvados for drinkers who want the apple spirit at its most concentrated. Browse our full All Discerning Palates collection with fast nationwide shipping delivered straight to your door.
