Abrojo is a gin made from mezcal's leftovers, and it comes from one of the most respected mezcaleros in Oaxaca. Gonzalo Martínez Sernas makes the celebrated Macurichos mezcal in Santiago Matatlán, and for years he'd watched the spent agave fiber — bagasse — pile up as waste after each batch. Abrojo is his answer: the bagasse is re-milled by hand with a massive wooden mallet in a long wooden canoe to draw out remaining sugars, combined incrementally with spring water, refermented with only wild yeast, then distilled once on a copper still before fifteen locally sourced botanicals join the second distillation. This Blue Label is the higher-proof expression, bottled at 50% ABV, built around blue agave, grapefruit peel, juniper, and native herbs — every botanical, juniper included, sourced within the Tlacolula district. Expect bright citrus zest, wildflower, and a subtle minerality on the nose with the unmistakable roasted-agave earthiness of its mezcal origins underneath, opening into a balanced palate of green herbs, softened juniper, mellow agave, and gentle spice, with the proof giving it real grip and a long, elegant finish.
