Blend #2 is the bolder follow-up to Alambique Serrano's debut — a higher-strength marriage of casks from the Krassel family's distillery on the steep hillsides of Santa María Tlalixtac in Oaxaca's Cañada region. German immigrant Max Krassel started distilling here with a handmade still on a coffee farm in the 1930s; his sons hauled aguardiente to remote villages by mule, Max Jr. flew it in by plane in the 1970s, and today grandsons Rommel, Axel, and William run the stills. Everything starts with organic Java-varietal cane grown between 2,500 and 3,800 feet, hand-harvested and pressed in mobile mills carried by mule, fermented with wild yeast in pine and steel vats, then distilled on custom-built column and copper pot stills. The rums age across environments from dry mountain bodegas to humid riverside cellars in a mix of ex-bourbon and French oak before blending, and Blend #2 is bottled at cask strength — a hefty 64.1% ABV — with no additives, sugar, or coloring. Expect concentrated fresh cane, orange peel, and baked stone fruit on the nose with vanilla and toasted oak, opening into a dense, oily palate of honey, cinnamon, black pepper, cocoa, and dry wood, finishing long and warm with the grassy agricole edge that runs through the whole range. It rewards patience and a splash of water. For drinkers who found Blend #1 the introduction, this is the deep end — and a genuine expression of high-altitude Oaxacan terroir.
