Single Cask #14 is exactly what it says: one barrel, bottled on its own, from Alambique Serrano — the Krassel family's three-generation rum project on the steep hillsides of Santa María Tlalixtac in Oaxaca's Cañada region. German immigrant Max Krassel started distilling here with a handmade still on a coffee farm in the 1930s; today his grandsons Rommel, Axel, and William run the operation. Everything begins with organic Java-varietal cane grown between 2,500 and 3,800 feet, hand-harvested and pressed in mobile mills carried by mule, fermented with wild yeast in pine and steel vats, then distilled on custom-built column and copper pot stills. Cask #14 spent two years in ex-bourbon oak before bottling at cask strength, 55.8% ABV, with no additives, sugar, or coloring. Where the numbered blends aim for balance across many barrels, the single casks are snapshots — one moment, one wood, unaveraged. Expect fresh cane and green banana on the nose with vanilla, caramel, and the gentle sweetness ex-bourbon lends, opening into a lively palate of tropical fruit, honey, black pepper, and light oak, with the grassy, savory agricole edge of high-altitude Oaxacan cane running underneath and a long, warm finish. Bourbon-barrel aging makes this one of the more approachable single casks in the series. Limited to the yield of one barrel; when it's gone, it's gone.
