Alambique Serrano Single Cask #2 Rum

Single Cask #2 was one of the earliest barrels Alambique Serrano bottled on its own — released under the Cañada Vida Nativa label with the name "Venado Temazate," after the brocket deer native to the Oaxacan mountains where it was made. The Krassel family has distilled sugarcane spirit on the steep hillsides of Santa María Tlalixtac in Oaxaca's Cañada region for three generations, since German immigrant Max Krassel started with a handmade still on a coffee farm in the 1930s; today his grandsons Rommel, Axel, and William run the stills. Everything starts with organic Java-varietal cane grown between 2,500 and 3,800 feet, hand-harvested and pressed in mobile mills carried by mule, fermented with wild yeast in pine and steel vats, then distilled on custom-built column and copper pot stills. Cask #2 aged two years before bottling at cask strength, 53.1% ABV, with no additives, sugar, or coloring — the gentlest proof in the single cask series. Expect fresh cane, citrus, and green herbs on the nose with light vanilla and oak, opening into a bright palate of tropical fruit, honey, and white pepper with the earthy, savory edge of high-altitude Oaxacan cane, finishing medium-long and clean. Where the numbered blends aim for balance across many barrels, the single casks are unaveraged snapshots of one moment and one wood. Limited to the yield of a single barrel.
