Madrecuixe is the mother of the cuixe family — a tall, trunk-forming karwinskii agave that grows wild in the dry valleys and takes twelve to fifteen years to mature — roasted in a conical stone-lined pit, crushed by tahona, fermented with wild yeast in pine vats, and double-distilled in copper, bottled at 48% ABV; every bottle is numbered by lot. Mezcal Reviews' tasters: very earthy on the nose with fruit and smoke, great minerality with a good balance of alcohol, woody fruit with a spicy mineral finish; warm sweet smoke, pine needles, and acetone; super earthy and grassy with a salt tingle and a punch of lemon; freshly turned earth in a tropical greenhouse. Karwinskii agaves give a profile unlike espadín — drier, more mineral, more herbal — and one taster found it sang beside a Vago tepeztate.
