ASW Distillery is Atlanta's hometown whiskey maker — the second legal distillery in the city since Prohibition, and a genuine anomaly in the South. Founders Jim Chasteen and Charlie Thompson met at the University of Georgia and bonded over whiskey; they teamed with fellow alumnus Justin Manglitz, a self-taught brewer and old-time string musician who became master distiller, and opened in Midtown in 2016. The nickname they gave themselves explains the method: Southern Pot-Still Distillers. ASW runs dual Scottish-style copper pot stills built by Vendome and distills grain-in, with the solids left in the pot through the run — an ancient technique almost nobody else in America uses. It was the first Atlanta distillery to produce an American Single Malt, and because Georgia went dry in 1905, thirteen years before federal Prohibition and two years before the "straight bourbon" standard even existed, Fiddler Soloist became the first straight bourbon ever distilled in the city. The Fiddler line runs two tracks: house-distilled high-malt bourbon, and a foraged high-wheat bourbon at 45% wheat — more than double the famous allocated wheaters — that Manglitz "fiddles" with through double-oaking, toasted barrels, and hand-charred Georgia heartwood staves, most famously in the Big Green Egg collaboration and the Atlanta Braves Chin Music series.
