It's a fitting name for a rum built on a genuine point of difference: most major rum brands ship in cane juice or molasses from elsewhere, while Bacoo is farm to glass, made entirely in the Dominican Republic from estate-grown, fresh-pressed sugarcane juice — grown, distilled, aged, and bottled on the island. The brand was created by the Sans family, already well known in spirits, after a father-and-son trip through Dominican distilleries, and it's produced at Alcoholes Finos Dominicanos in San Pedro de Macorís, an operation known for its environmental practices. Distillation uses both copper and stainless steel, and everything ages in ex-bourbon barrels in the tropical Dominican climate, where barrel interaction runs far faster than in cooler regions. The range spans a 3-year White, aged then charcoal filtered back to clarity and bottled at 86 proof so it cuts through a cocktail, plus 4, 5, 7, 11, and 12 Year aged expressions running from toasted coconut and butterscotch up through mango, baking spice, and vanilla bean.
