The Cooper & Thief Cellarmasters Select Bourbon Barrel Aged Cabernet Sauvignon is made from 100% California-grown grapes and, after primary fermentation and initial oak aging, spends an additional three months in used bourbon whiskey barrels. Published blends have included roughly 80% Cabernet Sauvignon with Merlot, Cabernet Franc and Petit Verdot, and the wine is bottled big, at 16.0% ABV. The producer describes dark cherry and ripe plum on the nose with vanilla, toasted caramel, a faint smokiness and cocoa powder, then black cherry and plum under firm tannins and a long, velvety finish of dark fruit, toasted oak and smoke.
