Distilleria dell'Alpe is a family distillery in San Pietro di Feletto, in the Prosecco hills of Treviso in the Veneto, founded in 1948 and run today by the Maschio family, with Alessandro Maschio at the stills. Its spirits look north, to the Cansiglio, an ancient forest of beech and silver fir on the high plateau between the Veneto and Friuli that was once the timber reserve of the Venetian Republic, and to mountain recipes first patented by Ferruccio De Bernard. The rule is natural ingredients only: no artificial flavors and no added coloring. Kapriol is the house signature, a juniper spirit named for the roe deer on its label, made by slowly distilling juniper berries and then infusing them with alpine herbs, and the old mountain cousin of modern gin. Amaro del Cansiglio gathers more than eighteen herbs, plants, and berries from the forest, with rhubarb, orange, gentian, and bay leaf, for a bright, alpine amaro at 25%. Amaretto del Cansiglio is cold-infused from Sicilian almonds and citrus peel, then aged eight months in French barriques. Rosen Bitter, a red aperitivo bitter perfumed with rose and laurel, comes in a full liter for Negronis and spritzes.
