Gabriel Boudier is the definitive house of Crème de Cassis de Dijon — the blackcurrant liqueur that gave the world the Kir and Kir Royale, and a name so tied to its city that "Crème de Cassis de Dijon" became a protected geographical designation. The company began as the Fontbonne factory in 1874; Gabriel Boudier bought it in 1909, put his name on it, and built the business until his death in 1918. His widow sold it in 1936 to the Battault family, who've run it ever since, keeping the trade name because it had already become synonymous with quality, and operating from the same Dijon premises since 1968. The flagship cassis is made by macerating whole blackcurrants in alcohol at 30% to draw out color and aroma, then balancing the fruit's natural acidity with sugar — Difford's describes it as exploding with concentrated blackcurrant fruit and intense tartness, with subtle green sappy notes for complexity. Michelin-starred chefs and top bars around the world use it. From that base the house has grown into one of the most versatile liqueur makers in Europe: crèmes of framboise, pêche, mûre, and violette, a full range of fruit liqueurs, eaux-de-vie, pastis, a Rare London Dry Gin, and the famous Saffron Gin — a recipe rediscovered in the Boudier archives that unites English gin with Indian spice and French craft, its distinctive golden hue coming entirely from saffron infusion.
