Pegasus Distillerie is an organic spirits house in Meursault, in the heart of Burgundy's Côte de Beaune, founded in 2021 by master distiller Maxime Girardin, whose family has made wine in the region for three generations. The distillery takes its name and its imagery from the night sky, from the winged horse on the label to the midnight-blue glass, and does everything in-house, from the organic Burgundy wheat and barley at the base of its spirits to the water, drawn from an underground river more than 120 meters beneath the distillery, and the distillation itself, run in batches on modern iStill cubic stills.

Orion Premium Gin was the first release and remains the flagship. It is built from five organic botanicals chosen for their terroir, citrus from Menton on the French Riviera and plants and a flower hand-harvested in the Swiss Alps, each distilled separately and then blended, and bottled at 43% ABV. The range has grown to include Pegasus Vodka from organic French wheat and Meursault spring water, Eau d'Or, a citrus and orange-blossom liqueur based on a historical recipe, and Shooting Star Vodka, aged a year in a terracotta amphora with a meteorite suspended inside. The brand launched in the United States in 2024 and named actress Emilia Clarke its global ambassador.
