Peruvian pisco comes in three styles, Puro from a single grape such as Quebranta or Italia, Acholado from a blend, and Mosto Verde distilled from partially fermented must, while Chilean pisco from the Elqui Valley is often rested in wood. It is the base of the Pisco Sour, the Chilcano and the Pisco Punch, and the best bottles sip like fine eau-de-vie.
