See the Elephant is an American-owned amaro brand launched in 2022 by founder Kyle Harder and produced on the Cilento Coast of southern Italy, near the Greek ruins of Paestum. The name revives a 19th-century American expression for setting out to witness something remarkable firsthand, and the label was designed by artist Cody Gunningham.

The amaro is an amaro di rucola: a neutral spirit is steeped for two to three weeks in arugula grown along the coast, then infused with a secret blend of herbs and spices and homemade caramel following a generations-old local recipe, and bottled at 30% ABV. Judges describe caramel, allspice, mint and orange on the nose with a bubblegum, root beer and peppery arugula finish.

The single expression has earned 96 points and Double Gold at the Bartender Spirits Awards, 95 points at the Chilled 100 Spirits Awards and a place on Brad Thomas Parsons' list of essential new-school amari.
