Spirit Works Distillery started in 2012 in Sebastopol, California, when husband-and-wife team Timo and Ashby Marshall built a genuinely grain-to-glass operation — organic red winter wheat from the Sacramento area gets milled, mashed, fermented, and distilled entirely on-site through a custom 1,000-liter hybrid still built by Carl Distilleries, Germany's oldest family of stillmakers. Ashby leads distilling as one of the few female-led teams in American craft spirits, and the lineup has picked up serious outside recognition, including a 2020 American Distilling Institute Distillery of the Year award and a 94-point score from Wine Enthusiast for the Barrel Gin alone. The range starts with a classic seven-botanical Gin, then branches into oak-aged versions (Barrel Gin) and Timo's family recipe for traditional English Sloe Gin, itself available in both a standard and barrel-aged Reserve — reportedly the only commercially available barrel-aged sloe gin anywhere. Every bottle is hand-labeled with batch information, since small variations are part of the charm of a genuinely small-batch operation.
