Wildwood Spirits Co. is a craft distillery in Bothell, Washington, founded by Seattle sommelier Erik Liedholm together with restaurateur John Howie. Liedholm brought a wine professional's palate to spirits, and the distillery's approach reflects it: Pacific Northwest grain, botanicals with a sense of place, and a house style built around balance rather than novelty. Everything starts from a vodka distilled in-house from Washington red winter wheat.
Wildwood Spirits Kur Gin is the distillery's flagship. That clean wheat spirit is the base for seven botanicals, each fractionally distilled on its own and then blended: juniper, Seville orange, Douglas fir, cardamom, fennel seed, coriander and Braeburn apple, the apples originally picked from Liedholm's own backyard tree in Seattle. Bottled at 80 proof, it is a London Dry style gin with a Northwest accent. A classic juniper foundation is lifted by bright Seville orange and the earthy freshness of Douglas fir, with cardamom, fennel and coriander spice unfolding on the palate alongside a hint of sweet apple. It is crisp enough for a dry Martini, and the distillery's own favorite call is a Negroni, where the fir and orange cut through the vermouth and Campari.
