Azar Spirits Flor De Azar Triple Sec Citrus Liqueur
Flor de Azar is a Mexican triple sec from Azar Spirits, made at the Flor de Luna distillery in Mexico City under maestra destiladora Hillhamn Salomé, and the whole operation, from ownership to the distilling team, is run by women. The base is double pot-distilled in copper from barley, corn and rye. Into that go ten botanicals: sweet and bitter oranges, pomelo, tangerine, lime and orange blossom for the citrus core, with lavender, cardamom, tuberose and black pepper underneath. The botanicals macerate in the spirit for four days and then go through a third and final distillation, after which the liqueur is sweetened with agave nectar rather than cane sugar. No coloring or additives. Bottled at 40% ABV, which puts it on par with Cointreau in strength. Skurnik, the importer, describes it as clear and bright, with cardamom leading the aromatics, black pepper and agave underneath, and a delicately bitter backbone on the finish. It is the obvious upgrade for a margarita, and the dry, peppery edge makes it a good Sidecar or Margarita al Pastor component when you want the citrus to read as peel rather than candy.
