Don Lorenzo Sierra Negra Mezcal
Don Lorenzo is a family mezcal from Santiago Matatlán, Oaxaca, made across two palenques by three generations of mezcaleros, with Maestro Mezcalero Antonio Hernandez Lopez at the stills. This bottling is distilled from Sierra Negra, a form of Agave americana that turns up in bottles far less often than Espadín and brings a very different character to the glass. The production is fully traditional. The agave is roasted in an earthen pit oven, crushed with a stone tahona, and left to ferment with open-air wild yeasts rather than commercial cultures, so the local environment shapes every batch. The fermented mash is then distilled twice in copper alembic stills and bottled unaged at 48% ABV. Matatlán is the heart of Oaxacan mezcal production, and Don Lorenzo's approach keeps the variables to the agave, the oven and the yeast rather than anything added later. At 48% this is a mezcal to sip neat, slowly, from a copita or small glass at room temperature, letting it open between tastes. A good bottle for anyone ready to move beyond Espadín into the less common agaves of the Oaxacan valleys.
