Tozai "Snow Maiden" is a Junmai Nigori from the Tozai line of authentic, approachable Japanese sake. Nigori is coarsely filtered so fine rice sediment stays in the bottle, giving it a snowy, cloudy appearance and a rich texture, but where most nigori lean sweet, Snow Maiden is surprisingly dry.
It is thick and chewy on the palate with vibrant, fresh aromas of rice and fruit, delivering the same creamy rice and fresh fruit flavors with substantial weight, then a pleasantly astringent, smooth finish at 14.9% ABV that keeps you coming back for another sip.
