Almatitán is the estate tequila of the Sandoval family, whose agave farming and distilling in the Valley of Amatitán, Jalisco, spans eight generations. Father and son Miguel and Florentino Sandoval produce it at NOM 1646, the newly built Destiladora La Roca in Amatitán, from certified organic Blue Weber agave grown on more than 800 acres of volcanic, mineral-rich family land in the Tequila Valley lowlands.
The house style is traditional and additive-free. Hand-harvested piñas are slow-cooked about two days at low temperature in stone ovens, roller-milled to preserve the fibers, fermented in open-air stainless steel tanks with wild yeast and deep well water amid the estate's lemon, mango and olive trees, and double distilled in copper pot stills. Unaged expressions rest in glass rather than steel, nothing is chill filtered, and the lowland terroir shows as cooked agave, citrus, pepper and minerality.
The range covers a glass-rested Blanco at 80 proof and the same spirit at 96 proof as Alma Plata, a Reposado aged five months in used Kentucky bourbon barrels, a limited 100-proof Alma Joven blending glass-aged blanco with ex-Wild Turkey barrel reposado, and an Añejo aged thirteen months in bourbon casks.
