Almatitán Alma Plata Tequila

Alma Plata is Almatitán's high-proof unaged tequila, the same organic estate spirit as the Blanco bottled at 48% ABV (96 proof) instead of 80 proof. Almatitán belongs to the Sandoval family, eight generations of agave farmers and distillers in the Valley of Amatitán, Jalisco, and is made by father and son Miguel and Florentino Sandoval at NOM 1646, Destiladora La Roca. The agave is 100% certified organic Blue Weber from the family's own volcanic-soil estate, slow-cooked in stone ovens, roller-milled, fermented in open-air stainless steel tanks with wild yeast and deep well water, and double distilled in copper pot stills. It rests four months in glass before bottling with no additives and no chill filtration. The producer describes an earthy, herbal nose with orange rind, jalapeño and honey, a palate of black pepper, minerality and light smoke, and a medium-to-long finish of citrus, herbal freshness and raw agave. In Taste Tequila's 2024 high-proof panel, tasters were split by its funky malolactic nose, with aromas of mushroom, parmesan, grass, clay and honeydew.
