Charbay Double Aged Rum
Charbay Double Aged Rum is a cask-strength sipping rum from the Karakasevic family distillery in Ukiah, Mendocino County, California, founded in 1983 and run by thirteenth-generation master distiller Marko Karakasevic. The base is not molasses but vacuum-extracted sugar cane syrup from Maui, fermented and double distilled in 2016 in the family's custom Alambic Charentais copper pot still, the same still that makes their brandies. The double aging is the unusual part. The clear rum first rested five years in stainless steel, a long stainless rest that Charbay uses to let the spirit settle and knit before wood ever touches it, and then spent three more years in used French oak barrels for a total of eight. It went into bottle at 68.5% ABV, 137 proof, with no dilution, in a run of only 120 cases. Charbay's own note: a pinch of brown spices, vanilla and smoky toasted oak on the palate, a smooth, refined finish with tingling heat, and overall a powerhouse of flavor that stays toasty and clean to the end.
