The Paicines Project bottling comes from Palisades Trail Vineyard in the Paicines AVA of San Benito County, a quiet inland appellation east of the Gabilan Range where warm days, cool Monterey Bay-influenced nights and old granitic and limestone-flecked soils ripen Cabernet slowly and keep its acidity bright; Paicines has long supplied fruit to larger coastal brands, and As One Cru puts the site name on the front label. The wine is Cabernet Sauvignon from this single vineyard, fermented in small lots and aged in French and American oak, with a portion new, to add spice without masking the fruit, and bottled around 14.5% ABV. Expect a medium to full-bodied, fruit-driven style of black cherry, blackberry and plum with cedar, mocha and dried herbs, soft, rounded tannins and a juicy finish that makes it easy to open on a weeknight with grilled tri-tip, burgers, barbecue ribs or a wedge of sharp cheddar.
