When Balcones Distilling opened in Waco in 2008, Baby Blue became the first legal Texas whisky on the market since Prohibition, and it is still one of the most distinctive corn whiskies in America. It is made from roasted heirloom Hopi blue corn, a variety with a rich, oily character that Balcones uses to add new sophistication to the old corn-whisky tradition.
Baby Blue is aged at least six months in oak and bottled at 92 proof. The blue corn gives it a nutty, toasted-grain sweetness like fresh cornbread and roasted nuts, with a soft, gentle finish rather than the raw bite of typical young corn whisky. It is a bold, funky, unmistakably Texan spirit, and a great one for tasting side by side with Balcones' True Blue cask-strength version or its Texas Single Malt.
