Baardseth XO Petite Champagne Single Cru Cognac is made entirely from eaux-de-vie of the Petite Champagne cru, the chalky terroir just outside Grande Champagne that produces fine, long-aging cognac. It is a blend of cognacs aged ten to twenty years, matured in humid, temperature-controlled cellars in small-grain French oak with a light toast.
The color is amber and copper with golden glints. The nose is powerful and complex, balancing minerality against dried fruit, prune and crystallized citrus with notes of blond tobacco and damp cellar. The palate combines fruit, minerality and the delicious oxidative rancio that marks well-aged cognac, and the finish is long and smooth with cigar box and old-cellar spice. Serve it neat in a tulip glass after dinner.
