Bigallet China-China Amer Orange Liqueur
Bigallet China-China Amer is a French bitter orange liqueur made since 1875 by Bigallet, a family distillery in the Isère region near Lyon. Sweet and bitter orange peels are macerated and distilled in copper alembic stills, then blended with a touch of gentian, cinchona and other herbs for a liqueur that sits between an orange curaçao and an amaro. Bottled at 40% ABV in a 750ml bottle.
The taste is intense candied orange peel and bitter orange with caramel, gentian and warm spice, finishing long, bittersweet and dry. It is a bartender favorite: use it in place of orange curaçao or Grand Marnier in a Sidecar, stir it into a Brooklyn or a Boulevardier variation, add a splash to a Manhattan, or serve it neat or with soda as a digestif. A must for anyone building a serious cocktail bar.
