Everything is done by hand, from peeling hundreds of pounds of citrus to weighing dozens of spices and decorticating vanilla beans, and Bittercube uses only raw ingredients with no extracts or oils.
Bolivar is light and aromatic, with notes of chamomile, jasmine, cinnamon, and dried fruit, inspired by an old recipe from a 19th-century cocktail book. Built on a three-spirit base, it is extremely versatile: a few dashes lift a gin Martini, a Champagne cocktail, a Bee's Knees, a light rum daiquiri, or a Tom Collins without overpowering delicate flavors.
