The eaux-de-vie are distilled with their lees, a technique that concentrates the aromatic esters, and aged in small fine-grain French oak barrels for a VS that is far more fruit-forward than most. It is bottled at 40% ABV in a 700ml bottle.
It pours deep gold with amber highlights. The nose is delicate jasmine and violet. The palate balances fresh mango and pear with sweet almond over fine, velvety tannins, and the finish is clean and lively. It is a genuine sipping VS and an outstanding cocktail cognac for a Sidecar, a Sazerac or a cognac highball with ginger ale.
