Celosa Rosé Tequila
Celosa is a rosé-colored joven tequila that gets its blush from wine barrels, not from anything added. It is made at Hacienda La Capilla, NOM 1479, in Tepatitlán de Morelos in the Los Altos highlands of Jalisco, by a partnership that includes José A. Beckmann, from the twelfth generation of the Cuervo-Beckmann tequila family, Esteban G. Beckmann and Paul Pietrini. The agave is 100% organic blue Weber, harvested from a single estate at seven years, cooked eight hours in autoclaves and rested four more, fermented 72 hours with a proprietary yeast strain, and double distilled in copper alembics. The finished tequila then rests 28 days in French oak barrels from Napa Valley that previously held Pinot Noir and Cabernet Sauvignon, which is where the pink hue and the red-fruit notes come from. No additives, bottled at 40% ABV. Celosa's own note is cherry and tropical citrus on the nose, berries and vanilla on the palate, and raisin, red fruit and vanilla on the finish. Distiller's review found berries, lemon and mild green herbs with a little toasted oak, a soft palate, and a light peppery agave bite at the end. Serve it chilled, neat, in a coupe.
