Cleveland 10th Anniversary Black Reserve Bourbon Whiskey
Cleveland Whiskey was founded in 2009 by Tom Lix in Cleveland, Ohio, and put its first bottles on shelves in 2013; the 10th Anniversary Edition of Black Reserve marks ten years of that. Cleveland does not age whiskey the conventional way: young bourbon, less than six months in barrel, is moved into pressure-capable stainless steel tanks with cut and measured charred oak, and the pressure is cycled up and down to force the spirit in and out of the wood, opening and closing its pores to do in days what a rickhouse does in years. Black Reserve is made from a mash bill of 75% corn, 21% rye and 4% malted barley and bottled at 100 proof (50% ABV), with no added sugar, artificial flavor or preservatives. Cleveland describes sweet vanilla oak, butterscotch and caramel on the nose, crushed clove, cinnamon and vanilla on the first sip, and a finish of pecan pie, raisins and caramelized sugar; the standard bottling took a Gold at the 2021 SIP Awards. Polarizing among traditionalists, but the technology has piled up well over a hundred competition medals, and this is the anniversary bottle.
