Curado Cupreata is one of the more unusual bottles in tequila: a 100% blue Weber blanco infused with roasted cupreata, an agave normally used for mezcal. Curado was created by the Estes and Camarena families of Tequila Ocho, El Tesoro and Tapatio, inspired by Ocho founder Tomas Estes and the old practice of pulque curado, flavoring an agave drink by infusion. Because tequila can only be made from blue Weber, the brand needed permission from the Consejo Regulador del Tequila to infuse with another species and still label it blanco tequila. The base comes from NOM 1474 in the Los Altos highlands of Jalisco: brick-oven cooked, roller-milled, fermented open-air in wooden tanks and double-distilled in copper pot stills. Into every 1,000 liters of 100-proof blanco go about 21 kilograms of cooked cupreata from José Guadalupe Pérez in Michoacán, steeped in cotton bags for five days, then filtered out before the tequila is brought down to 40% ABV. Tequila Matchmaker reviewers consistently note cooked agave, smoke, pepper and baking spices, with an oily texture and a medium finish. It sits between a highland blanco and a light mezcal, and works neat or in a Paloma.
